London’s Halkin Hotel to open Arzak restaurant in 2013

UK: London boutique hotel to include outpost of Basque three Michelin-starred restaurant from 2013.

The Halkin’s owners, COMO Hotels and Resorts, has agreed a deal with Juan Mari Arzak, the chef behind the San Sebastian restaurant which won its third Michelin star in 1987, and has been run by four generations of the same family.

The Halkin is a 41-room boutique hotel in London’s Belgravia. Its new restaurant will be called Ametsa with Arzak Instruction, and is due to open in February 2013, replacing the Thai restaurant Nahm. Interiors will be designed by the London-based consultancy AB Rogers.

Arzak Instruction was established by Juan Mari Arzak, as well as his daughter Elena and chefs Mikel Sorazu, Igor Zalakain and Xabier Gutierrez.

It aims to deliver the philosophies of the restaurant’s cooking style, which is described as “Basque, research, evolution, vanguard”.

Elena Arzak said: “Ametsa means ‘dream’ in our language. The dream of a kitchen beyond our frontiers, in the middle of London, in the heart of the Halkin hotel.”
