Rick Stein to open restaurant at Australian boutique hotel

Australia: Rick Stein will open a restaurant at the new Bannisters hotel in Port Stephens, NSW, which is set to open late 2018.

The boutique hotel will occupy the beachfront site of the former Salamander Shores at Soldiers Point.

Food offerings will include a pub for casual dining and pizzas as well as a signature restaurant by Stein.

Stein said “The abundance of top-quality seafood is a massive attraction as is the proximity to the Hunter Valley’s wineries. I will be working closely with head chef Mitchell Turner to design a menu featuring local king prawns, yellow fin bream, flathead, calamari and school whiting, not to mention the fabulous oysters.”

The 80-room hotel, Bannisters Port Stephens, will be designed by architect Tony Freeman with the help of interior designer Romy Alwill and will include luxury suites and a penthouse. Fifty rooms come with bay views over the Karuah River, as well as vistas of forest and bushland.

Stein also has a restart at the group’s Bannisters by the Sea hotel at Mollymooks.
