Emma Broom appointed head chef at the Lord Crewe Arms

UK: The Calcot Collection has appointed Emma Broom as head chef of the 21-room Lord Crewe Arms in Blanchland, Northumberland.

She joins from 21 Newcastle, where she was senior sous chef for two years. In her new role she will be responsible for the food offer at the hotel’s Bishop’s Dining Room and the Crypt pub, set within a medieval vaulted space.

New dishes added to the menu by Broom include a fresh garden salad, featuring courgettes, peas and fennel from the hotel’s garden, which she intends to extend alongside introducing hens to lay eggs.

Broom, who has previously worked at Macdonald hotel in Windsor, Idle Rocks in St Mawes and St Michael’s hotel in Falmouth, said she was delighted “to lead such a strong team of chefs, producing dishes that embody the best of British flavours and produce”.

“I’m already enjoying experimenting in the kitchen and plan to use as much produce that can be grown right on our doorstep in these wonderful grounds as possible,” she said.

The Calcot Collection operates Lord Crewe Arms on a long lease in a joint venture with the Lord Crewe’s Charity, the owner of the freehold of the property. It is also the owner and operator of The Calcot, the Painswick, Barnsley House and the Village Pub, all in the Gloucestershire Cotswolds.
