UK: Budget-luxe motel and diner brand Mollie’s has signed an agreement with developer Parabola for its fourth site in the UK, located at Edinburgh Park.
The proposed hotel and diner will be located close to Edinburgh Park Station and is scheduled to open in 2028, subject to planning permission and licensing.
Edinburgh Park is an emerging urban quarter spanning approximately 73,000 square feet. It is set to feature around 200 rooms, a diner with an outdoor terrace, meeting and event spaces, and cycle and car parking with electric vehicle charging stations.
The development aligns with Edinburgh’s City Plan 2030, which will see the transformation of the Edinburgh Park/South Gyle area from a business-centric zone into a mixed-use district.

Mollie’s currently operates motels in Bristol and Oxfordshire, with a Manchester city centre location set to open later this year.
