US: Grayson Hotel, a new build property part of The Unbound Collection by Hyatt, has opened in New York City.

Owned, developed and managed by the Fortuna Hotel Collection, the project marks the first Unbound Collection by Hyatt hotel in the city. It has been designed by MarceLLO Pozzi Architecture & Design (MLLO) with guest rooms by The Setting New York and the dining venues overseen by Dutch East Designs.

Featuring 296 rooms, each come with a mini bar offering to-go craft cocktails, local snacks and drinks, Lather bath and body products, and custom-designed bathrobes.

Other amenities include several F&B outlets, a 24-hour gym, and guests will also receive access to Oasis Day Spa close by the hotel.

New York-based hospitality company Apicii, led by CEO Tom Dillon, will launch three dining venues beginning this autumn. The ground floor all-day dining restaurant, Harta, will serve pan-mediterranean brasserie whilst the Bar Harta on the second floor will offer wine and tapas. 

Bar Cima, up on the 28th floor, is an indoor-outdoor rooftop venue with views of the Empire State Building and the East and Hudson Rivers. The bar will stock a mezcal and tequila collection. Early next year, Tacalle will launch as a taco garden. Both concepts have been created by Dillon.

General manager of Grayson Hotel, David McManus, said: “New York is a city built on grace and grit and we’ve engaged the same principles to create Grayson. Concrete ceilings, iron-railed staircases and detailed millwork are the backdrop for the best in dining, rooftop lounging and a series of collaborations with NYC institutions. Grayson Hotel is all about celebrating what makes New York, New York.”
