UK: Located in the village of Wansford-in-England in Cambridgeshire, Haycock Manor Hotel will launch on 22 June following restoration of the Grade II-listed building.
The first phase of the opening will see its 49 bedrooms unveiling alongside two restaurants as well as a bar and lounge.
Bedrooms are divided into clusters with classic doubles, garden classics, feature rooms, junior suites or master suites. In the feature rooms and suites, Elizabethan fireplaces, roll-top baths and four-posted beds all reflect the hotel’s history.
Executive chef Lee Clarke will oversee the kitchen, including breakfast, afternoon tea and the property’s casual dining restaurant Haycock Kitchen. The restaurant will serve seasonal grills and salads and will feature a garden terrace overlooking the village high street.
The Prévost Restaurant, recognised in the Michelin Guide, previously existed in Peterborough but from June 2021 will be housed in an Orangery overlooking Haycock’s kitchen gardens.
The second stage will be completed in August and will comprise a cookery school and farm shop, and in early 2022 the hotel will launch a spa and riverside clamping. Ahead of the spa launch next year, a fitness suite will open and electric bikes, canoes and paddleboards will be available for guests to use on the River Nene.
Upon launch, it will become a member of the Preferred Hotels & Resorts L.V.X. Collection and a Pride of Britain hotel.
