Scotland: A boutique vegan hotel dedicated to “showcasing ethical luxury” is set to open soon in Perthshire.
Launching on 15 June, Saorsa 1875, formerly the Birchwood hotel, will have 11 bedrooms individually decorated with “bohemian” styling and antique furnishings. The baronial property overlooking Pitlochry was constructed in 1875.
The hotel’s name comes from the Scottish-Gaelic word for freedom or liberty. The property also includes non-toxic and non-animal-tested cleaning products from Method and vegan toiletries, is powered by green energy company Ecotricity, and has minibars stocked with locally-sourced, vegan delicacies.
As well as having two acres of natural woodlands and gardens, the hotel will feature a lounge and restaurant serving a plant-centred menu which showcases local, seasonal and foraged produce, and a drinks list of local beers, wines and cocktails inspired by the region.
Jack McLaren-Stewart owns the property with his parents Sandra and John, who are all vegan, and the family plan to expand the brand with additional hotels in the future.
Sandra said: “We wanted to create a space where everybody – vegans and otherwise – can come together to celebrate the incredible innovation and diversity that we’re seeing across the movement. This isn’t about abstinence or sacrifice, it’s an environment where guests can experience amazing food, drink and design that doesn’t come at the expense of our fellow animals.”
