Exclusive Collection set to debut two F&B venues

UK: Hillfield Restaurant & Bar at Pennyhill Park, and The Wellhouse at Lainston House, are set to open this spring ahead of the summer months.

Hillfield Restaurant & Bar, named after the earliest historic reference to the land ‘Pennyhillfield’, will showcase Surrey produce with a farm-to-fork concept, overseen by Lewis Russell.

The restaurant will be open all day for breakfast, lunch and dinner, serving seasonal British brasserie. Breakfast will be available à la carte with a central juice station, whilst lunch and dinner services will offer a daily ‘Surrey Grill’ specials board, weekend brunches and traditional Sunday roast platters.

A dedicated cheese bar will feature a rotating selection of local artisanal cheeses and predominately British varieties. The ‘Hillfield Young Farmers’ menu will cater to children.

In the bar, in addition to coffee, beer and cocktails, hot and cold plates will be served throughout the day including bar nibbles as well as pastries and cakes from the Pennyhill bakery. 

Hillfield Restaurant & Bar is located in the five-star luxury resort, Pennyhill Park, and will sit alongside the Michelin-star restaurant Latymer. 

As part of the hotel’s redevelopment, Pennyhill Park will also unveil a new alfresco dining spot, Lily Pond. Open from midday to 8pm daily, the terrace will focus on wood-fired cooking and will be operated during the warmer months. It can also be hired out for exclusive use.

The Wellhouse, housed in the cookery school at Lainston House, will provide indoor and outdoor seating (in the kitchen garden). Spearheaded by Phil Yeomans, the menu will be inspired by produce found in the country including meat, fish, dairy, wines and spirits.

Open during the evenings only, the restaurant will offer sharing platters for larger groups and will also cater to smaller, more intimate dates. 

As a social venue, The Wellhouse will complement the award-winning restaurant in the main house, The Avenue, which offers a fine dining menu.

At Exclusive Collection, the group operates six award-winning restaurants including two with Michelin stars, afternoon teas at every property, wine tasting experiences, a cookery school, a golf club and pub.
