Rosemary Shrager creates menu for Flemings Mayfair

UK: Flemings Mayfair, a boutique hotel in London’s Mayfair, has teamed up with TV chef Rosemary Shrager to create an a la carte menu for its restaurant The Grill.

The By Rosemary Shrager menu, which launches at the end of January, includes a series of dishes created by Shrager, her executive chef John Rogers and Flemings’ head chef Brian Henry. The menu, which will form part of the existing a la carte offering at The Grill, will be updated seasonally throughout the year.

The dishes were developed at Sharager’s cookery school in Royal Tunbridge Wells and consists of 12 dishes. The spring menu includes a gratin of smoked haddock with leeks and toasted brioche, pig’s cheek with pomme puree, red cabbage and cider jus, and a prune frangipane.

Flemings GM Oliver Brown said: “We’re delighted that Rosemary has joined the Flemings family. With Rosemary being born and bred in London, just a stone’s throw from Mayfair, she has a love of traditional, British food using seasonal ingredients, and is the perfect fit to refresh our menu at The Grill. I can personally attest that the dishes are fantastic – and I am confident our diners will agree.”

Rosemary Shrager said: “All dishes included on the menu have been designed to tickle diners’ taste buds, and introduce them to a wonderful world of flavours, aromas and the finest ingredients. The haddock gratin starter is my absolute favourite as it uses my very own brioche recipe, and the pairing of it with the fish is to die for! All the dishes are of the highest quality, so fit perfectly with Flemings Mayfair and the premium dining experience it offers its guests.”

Shrager is self-taught and has worked with chefs including Marco Pierre White, Pierre Koffmann and Jean-Christophe Novelli.
