US: The Tapestry Collection by Hilton property, in Central Jersey, has appointed Jerry Donohue as executive chef behind the hotel’s TAP Gastropub.

Set to open doors in January 2020, the beer-centric restaurant will focus on comfort food.

Donohue will oversee all aspects of the hotel’s dining experiences, from menu creation to group catering services. He brings 18 years of experience to the position, and previously served as executive chef at High Line Hotel in New York City.

“I am thrilled to be leading the team at TAP Gastropub and am confident my culinary knowledge and passion for delivering exceptional cuisine will aid in the revitalisation of a local hotspot,” said Donohue. “The menu will blend contemporary comfort food with a traditional approach that is guaranteed to satisfy guests and locals alike. It will also showcase a number of local ingredients to make diners feel like they’re at home when experiencing TAP Gastropup”.

Donahue’s inspiration for the menu was drawn from nature and the seasons of New Jersey, placing a twist on classic British dishes while incorporating elements from the local area.

“We could not have found a better expert to spearhead our innovative culinary program,” said Michelle Satanik, general manager at Somerset Hills Hotel.”Jerry is dedicated to presenting new and vibrant flavours, while staying true to New Jersey’s roots. We are confident the culinary team will deliver an unmatched dining experience under his leadership and are eager to see what initiatives they develop as we prepare to open doors.”

The restaurant will be open daily for breakfast, lunch and dinner, with availability to host a catered event featuring a personalised menu in one of the hotels meeting spaces.

Somerset Hills Hotel, managed by Valor Hospitality Partners, is a 118-bed property having undergone a $22 million renovation. It is accepting reservations from late-March 2020 onwards.
