• One of the main concerns around sustainability for both hotels and domestic consumers is the issue of food miles.
A couple of weeks after the English asparagus season finished earlier this year I noticed that my local supermarket was stocking spears from all the way from Peru. And New Zealand lamb is also a staple of UK retail – produce which has literally come from the other side of the world.
So hats off to Burley Manor, part of the New Forest Hotels group, which has launched a lunch menu featuring dished which are all made with local ingredients. And by local, they have specified a maximum distance of 15 miles from the property.
The current menu includes trout, pork belly, plaice and a local cheese board. Of course not every hotel has the geographic advantages of Burley Manor. Being in the New Forest, with the Hampshire chalk streams, the Solent and the area’s famed wild mushrooms and game on its door step, is a blessing. But it’s a fantastic initiative and one which I hope other hotels will embrace.
