US: Hotel Darby located in the Catskills is the latest property to open from husband-and-wife team Sims and Kirsten Foster at Foster Supply Hospitality.

The 27-room property sits on 17 acres of land with a private trail system. Rooms range from King and Queen size as well as suites with connecting bunk rooms. All feature an en-suite bathroom and most have workspaces.

Amenities include a bar and lounge area with a grab and go menu from local producers, as well as various activities. A large barn is outfitted with equipment for on-site games and there’s several outdoor spaces including fire pits, gardens and a hammock grove.

Kirsten Foster, cofounder of Foster Supply Hospitality, said: “Hotel Darby marks a significant moment for our team and Foster Supply. As our first hotel in Pennsylvania, we have the opportunity to deliver our signature experience and continue to work with our friends and neighbours in the Narrowsburg and Callicoon area, but now we have expanded the experience to include even more great local restaurants, shopping and activities in Pennsylvania towns like Hawley and Honesdale. We always aim to showcase a new aspect of the region with each of our hotels, and Hotel Darby will do just that.”

Hotel Darby is owned and operated by the Foster’s. The couple opened their first property The Arnold House in 2014, followed by four more hotels and two standalone restaurants. Hotel Darby is the first project outside of Sullivan County in Pennsylvania.
