UK: Brown’s Hotel is set to unveil a new restaurant named Charlie’s to be directed by Michelin-starred chef, Adam Byatt.
Opening Monday 9th September 2019, the restaurant – named after Lord Charles Forte – aims to celebrate the heritage of the hotel.
Charlie’s will serve dishes made from ingredients that have been sourced from suppliers across the globe, with specials including whole poached salmon and glazed Essex gammon.
Highlights from the a la carte menu include fried courgette flowers with truffle honey and roasted Yorkshire grouse, blackberries and bread sauce.
Stuart Johnson, managing director at Brown’s, said: “Adam Byatt and Brown’s possess a natural synergy and we are looking forward to what we see as an incredibly exiting culinary journey ahead with Charlie’s.”
Owain Atkinson, previously from Kitchin, La Petite Maison and Chez Bruce, will oversee the wider food offering for the hotel as executive chef, with Matt Starling serving as the restaurant’s head chef.
“Taking this step and joining the team at Brown’s Hotel is a very exciting moment for me, and it feels like a natural progression both professionally and personally,” said Byatt.
Designed by Olga Polizzi, the interiors of the restaurant and bar will feature artwork from Kristjana S. Williams, whose pieces are showcased in some iconic London venues.
A “botanical utopia” will surround diners, along with original wood panelling and exclusively-commissioned bespoke wallpaper by Adam Ellis.
