Indonesia: Scheduled to open in September 2021, Tom’s by chef Tom Aikens will launch at The Langham Jakarta.
Located on the 62nd floor of the hotel, the restaurant will serve a British and French influenced menu. The opening will mark Aikens’ first in Southeast Asia.
An à la carte Gueridon service of meat carvings, burrata and various desserts will also be introduced. Champagnes and cocktails will be presented and prepared for guests at the table.
“At Tom’s, the produce is the hero,” said Aikens. “We are celebrating flavours and harmonising taste and texture, working with the world’s best meat, imported or dry aged to perfection in-house, along with poultry and seasonal seafood prepared and cooked “on the bone” which is a superior method of cooking.”
The restaurant will feature an open kitchen, Himalayan salt-dry meat lockers, and a wood fired grill. A mezzanine lounge that overlooks the main restaurant will host whiskey bar.
Tom’s at The Langham, Jakarta will be helmed by executive sous chef, Giles Langford, who was trained by Aikens. Langford initially studied agriculture and horticulture but developed a passion for food – in particular modern-classical French cuisine and Italian gastronomy. He will also create a rooftop eco-garden at the hotel to grown herbs that will be used solely at the restaurant.

The 223-room Langham hotel in Jakarta City will be Langham Hospitality Group’s first property in the region.
